Ingredients

  • • 1 lb white American cheese, shredded
  • • 1 cup whole milk (plus more to thin)
  • • 1 can diced green chiles, drained
  • • 1 small tomato, finely diced
  • • 1 jalapeño, minced (seeds out for mild)
  • • 1/2 tsp cumin, 1/2 tsp garlic powder
  • • Squeeze of lime, pinch of salt

Method

  1. Warm milk in a heavy pan over low heat — do not boil.
  2. Add cheese a handful at a time, whisking until smooth.
  3. Stir in chiles, jalapeño, cumin, and garlic powder.
  4. Fold in tomato off heat. Finish with lime and salt.
  5. Thin with milk if it tightens up. Serve immediately.

Ingredients

  • • 2 (8 oz) bricks cream cheese, softened
  • • 1 cup sour cream
  • • 1 packet ranch seasoning
  • • 2 cups shredded sharp cheddar
  • • 8 slices bacon, cooked and crumbled
  • • 2 scallions, sliced

Method

  1. Heat oven to 400°F.
  2. Mix cream cheese, sour cream, and ranch until smooth.
  3. Fold in half the cheddar and half the bacon.
  4. Spread into a baking dish, top with remaining cheddar.
  5. Bake 18–22 min until golden and bubbling.
  6. Finish with bacon and scallions. Serve with thick chips.
