- • 1 lb white American cheese, shredded
- • 1 cup whole milk (plus more to thin)
- • 1 can diced green chiles, drained
- • 1 small tomato, finely diced
- • 1 jalapeño, minced (seeds out for mild)
- • 1/2 tsp cumin, 1/2 tsp garlic powder
- • Squeeze of lime, pinch of salt
Method
- Warm milk in a heavy pan over low heat — do not boil.
- Add cheese a handful at a time, whisking until smooth.
- Stir in chiles, jalapeño, cumin, and garlic powder.
- Fold in tomato off heat. Finish with lime and salt.
- Thin with milk if it tightens up. Serve immediately.
Crack Dip — yes, it lives up to the name.
Ingredients
- • 2 (8 oz) bricks cream cheese, softened
- • 1 cup sour cream
- • 1 packet ranch seasoning
- • 2 cups shredded sharp cheddar
- • 8 slices bacon, cooked and crumbled
- • 2 scallions, sliced
Method
- Heat oven to 400°F.
- Mix cream cheese, sour cream, and ranch until smooth.
- Fold in half the cheddar and half the bacon.
- Spread into a baking dish, top with remaining cheddar.
- Bake 18–22 min until golden and bubbling.
- Finish with bacon and scallions. Serve with thick chips.
